
Simple Soda Bread

250ml full fat milk
½ tsp lemon juice
300g wholemeal self-raising flour
½ tsp bicarbonate of soda
How to make
Step 1
Pre-heat your oven to 200°C / 180°C / gas mark 6 then line a baking tray
Step 2
Squeeze the lemon into the milk and stir together. Leave for about 5 minutes. This creates a ‘homemade’ buttermilk, which is the traditional milk used for soda bread
Step 3
Sift the flour and baking soda into a large mixing bowl. Add the ‘buttermilk’ and stir to create a dough
Step 4
Tip the dough onto a floured work top and add a sprinkle of extra flour if too sticky. Bring together by lightly kneading into a round loaf, then place onto the lined baking sheet. Cut a cross across the middle of the loaf – around 2cm into the loaf (this helps the dough to cook in the centre)
Step 5
Bake for around 30 minutes until golden and hollow sounding if tapped on the bottom

Recipe notes
Serve warm but not hot with unsalted butter, maybe with some honey for 12 months+. Slice when cooled for sandwiches, or serve with a soup or stew.
