
Ricotta Pancake With Salmon & Egg

For the pancake:
250g ricotta cheese
125ml whole milk
2 large eggs, separated
100g plain flour
1 tsp baking powder
3 tsp chopped chives, plus extra for sprinkling
For the top:
2 fillets of poached salmon cooked and flaked
2 poached eggs
How to make
Step 1
Put the ricotta, milk and egg yolks into a medium sized bowl and mix well to combine. Stir in the flour, baking powder and chive and whisk into a smooth batter. Whisk the egg whites until they become foamy and then fold them into the ricotta mixture
Step 2
Heat the oil in a large frying pan and drop in a ladle of batter
Step 3
Cook the pancakes for about 1 minute until golden and then flip them over and cook for another minute
Step 4
Place 2-3 pancakes on a plate, topped with flaked salmon, then the poached egg and sprinkle with some chives. Serve warm
