
Peanut Butter Gummy Cookies

Ingredients
1 ripe banana (overripe is fine)
50g crunchy peanut butter (one that is made from 100% peanuts with no added sugar or salt)
1 tbsp milk
1 tbsp maple syrup
¼ tsp vanilla extract
100g rolled oats
20g plain flour
2 packets Goodies fruit gummies, moos or stars (whichever flavour you prefer), cut into halves
How to make
Step 1
Preheat the oven to 180°C / 350°F / Gas Mark 4
Step 2
In a large bowl, mash the banana with a fork until smooth
Step 3
Add the peanut butter, milk, maple syrup and vanilla, and mix well
Step 4
Add the oats, flour and Gummies, then stir until combined
Step 5
Place approx. 12 evenly sized spoonful’s of the mixture onto an ungreased baking tray, placed well apart, then press down on each one to squash slightly
Step 6
Bake in the preheated oven for about 12-15 minutes, then leave to cool on the baking tray. The cookies should be crunchy on the outside with a slightly cake like texture in the middle
