1 ripe banana
Coconut oil or vegetable oil for frying
Natural or Greek yogurt
How to make
Blend together the eggs and peeled banana in a liquidiser or food processor until smooth
Heat a drop of oil in a small frying pan over a medium heat
Add a ladle of batter to form a small pancake approx. 6cm across. Allow it to cook for about 2-3 minutes: bubbles will form on the top. Then flip it over and cook the other side. Repeat until you have used up all the batter (you can cook a few at a time in a larger pan if you prefer and keep the cooked pancakes warm in a low oven while you cook the rest)

Serve warm with a little natural or Greek yogurt and some chopped fresh strawberries or other seasonal fruit if you prefer (or more banana).
You could use a dairy free yogurt such as coconut yogurt if you prefer.
